The new owner of the Aztec Café, Robbie Dobyns, has transformed the joint into a cozy European-style coffee bar. He has kept enough edginess to make one feel comfortably cool - the pitted wood floors, dark benches, and roughly textured walls - but has added light, art, and a gourmet menu to the mix. Surrounded by the right friends, you may think you've died and gone to Prague.
A native Santa Fean, Dobyns bought the café this past September. His partner, Sarah Wilhelm, creates the carte du jour and manages the counter, while Dobyns focuses on the business side of the operation. With live music on Friday and Saturday nights, Dobyns' vision for Aztec Café is one where students from St. John's engage in lively discussions, where up and coming artists are discovered, and people from all walks of life feel comfortable.
Aztec Café boasts the best "anti-Starbuck's" coffee in Santa Fe. The Arabica beans are roasted locally by Aroma Coffee of Santa Fe. Pastries are also baked fresh daily by the local Chocolate Maven, Sage Bakehouse, and Plaza Bakery. Tea connoisseurs will be especially impressed with Aztec's choice of San Francisco-based Mighty Leaf which arrives in silk tea pouches, and the homemade mate.
Cold and hot sandwiches include Dobyns' special Green Chili Chicken Salad, the only item on the menu he makes himself. There are choices for carnivores, vegetarians, and vegans at an average of $5.50 per sandwich. Black bean, and French and Hungarian mushroom soup have recently made their debut, and the menu also features smoothies and homemade ice cream.
